Hold start while selecting Iori to select Orochi Iori mode.

In your jumping hard attacks, the guarding slidetimes, ctrltimes, hittimes and velocities should be that of a hard hitdef. So for Iori's jumping hard punch, you should have guard.velocity = -11.1796875, guard.hittime = 17, guard.slidetime = 17, etc etc.

Also, Knockdown attack needs specified guard velocities :P.

Opinion: Alt DEF files for Orochi mode? Just so the computer doesn't randomly pick between the two in Arcade mode whenever I decide to fire it up.
